Australian cuisine today has been heavily influenced by the country's south East Asian neighbours and by the early waves of Greek, Lebanese and Italian immigrants. The trend today, helped by plentiful year round fresh produce, is toward low-salt, lowfat, healthy cuisine, incorporating lean meat, plentiful seafood and lightly cooked colourful steamed and stir-fried vegetables. All of this coupled to indigenous foods such as lemon myrtle, native spinach, bush tomato, mountain pepper and seed varieties adds up to a unique taste and style.
